Skin potatoes. Coarsely grate zucchinis and potatoes. Slice onions into rings, then halve rings. Add eggs and flour. I usually mix this with my hands.
Heat 2-3 tablespoons of oil in pan, add 1/3 Cup potato mixture and press down, cook to golden brown then turn over and cook other side. Keep warm in oven until all pancakes are cooked.
Carrie tells us, "Serve with homemade applesauce and sourcream."
