Twice Baked, Cheesy Potatoes

The amounts don't really matter too much for this recipe, as I made it up from scratch, and I'm not one for measuring. Use the amount of ingredients to suit your own tastes.

  • Large Potatoes (as many as you need for your family)
  • Cheese (Velveeta works well, but cheddar is also good)
  • Milk
  • Tabasco Sauce (optional)
  • Cayenne Pepper or Paprika
  • Microwave or bake the potatoes until almost cooked. It's ok if they are still slightly "hard." Slice them in half length-wise. (Careful, they're HOT!) Use a spoon or knife to scoop out most of the potato from it's skin, leaving a nice shell behind. Put the scooped out potato into a microwave safe bowl and place the potato skin shells on a cookie sheet. Set your oven or toaster-oven for about 400 degrees. Put the shells in the oven to get crisp while you put together the potato mixture.

    Cube or slice the cheese and add to the bowl with the potato insides. Use as much or as little cheese as you like. The more cheese you use, the more creamy the mixture will be. Add a dash of milk (Approximately a quarter of a cup.) Add tabasco sauce if you like yours spicy. Again, add as much or as little as you like, depending on your tastes. For the kid's potatoes, you may want to leave out the tabasco. Put the microwave safe bowl in the microwave on high for approximately 2 minutes, or until cheese is thoroughly melted. Remove from microwave and stir mixture up with a spoon or fork, leaving some small chunks of potato. If mixture is not as smooth as you would like, add a bit more milk.

    Remove shells from the oven, and fill each with potato mixture. Sprinkle top with Cayenne Pepper or Paprika. Broil for a few minutes until slightly brown on the top. Serve.

    Delila tells us, "It sounds more complicated than it really is, and tastes like it took a lot more work! Try adding different ingredients such as roasted garlic, onions, ham, or broccoli. Pretty much anything goes well in a potato!"
