Cream of Potato Soup

  • 1 medium onion, chopped
  • 4 tablespoons butter
  • 6 or 7 medium potatoes
  • Garlic salt to taste (optional)
  • Salt and pepper to taste
  • 1 (10 3/4 ounce) can cream of chicken soup
  • 12 ounces processed cheese (I recommend Velvetta)
  • 2 cups milk
  • In saucepan, saute onion in butter. Peel potatoes and cut into small cubes. Add potatoes to onion and barely cover with water. Season with garlic salt, salt, and pepper. Cook until almost mushy. Stir in can of soup. Cut cheese into thin slices and stir into potato mixture. Stir until cheese has melted. Add milk and stir. Makes six servings. Garnish with chopped chives, if you like.
