Recipe Submitted by Hermes from Sydney, AUS:
1) Mix the cornstarch & sugar in a saucepan. Stir in the milk gradually & bring to boil, stirring constantly.
2) Stir this mixture into the eggs, then return mixture to the saucepan.
3) Cook over moderate heat until mixture thickens (MUST NOT allowed to boil), then remove from heat & let cool.
4) Chop the pistachios & fold into the custard with the cream. Pour mixture into an ice-cream maker & churn until frozen. When the ice cream is ready, store in the freezer or serve.
Hermes tells us, "My grandma loves to make this when I go to visit her in Florence, Italy. "Gelato (ice cream) is no doubt one of Italians' favourite desserts. Give it a try, I'm sure you'll love it too!"
