"Porkchops & Rotel"

Recipe Submitted by Deborah from Oklahoma City, OK:

  • 4 to 6 pork chops
  • 4 to 6 tbs.of oil
  • garlic powder to taste
  • salt & pepper to taste
  • 1 can rotel tomatoes
  • all purpose flour
  • water
  • Take large skillet add oil and heat till hot. Season pork chops with garlic, salt and pepper. Brown pork chops quickly until they are light brown on both sides. Take out of skillet and put into a bowl set aside. Put enough flour in skillet to make a smooth paste, add salt and pepper to taste. Stir continuously until medium brown. In meantime have can of rotel tomatoes chopped,poor tomatoes juice and all into skillet, add enough water to make a gravy and continue to stir for a few minutes. Add pork chops to skillet mixture put lid on skillet turn fire down to low and simmer stirring occasionally, for 30 to 45 minutes.

    Deborah tells us, "The gravy off of the pork chops is great on mashed potatoes."
