"Mandarin Orange Cake "

Recipe Submitted by Z&S's Mom:

For Cake:

  • 1 cup sugar
  • 1 cup flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 egg
  • 1 can(11 oz) mandarin oranges, drained
  • 1 tsp vanilla extract

    Topping:

  • 3/4 cup brown sugar
  • 3 tbsp butter
  • 3 tbsp milk

    • Cake: Mix all ingredients except vanilla in a bowl and beat three minutes on medium speed. Add vanilla. Pour into an 8 inch square pan and bake at 350 degrees for 30 to 35 minutes. While cake is still warm, poke lots of holes in top with fork (this allows the topping to go down in).

    Topping: Bring topping ingredients to a boil and pour over hot cake. Serve warm or cold.

    Z&S's Mom tells us, "This is mine and my son's favorite cake. My grandmother used to make it for me and now Zaq's grandma makes it for him (and me too, of course!). It's real easy to make, and a bit messy and sweet so toddlers LOVE it!"
