"KC's Enchilada Casserole"

Recipe Submitted by Krista from Gridley, CA:

  • 12 Corn tortillas
  • 2 lbs ground beef
  • 1 can sliced black olives
  • 1 bunch green onions
  • 4 cups shredded cheddar cheese

    SAUCE
  • 1 cup flour
  • 1/4 cup chili powder
  • 1 clove minced garlic
  • salt (to taste)
  • 6 beef bouillion cubes
  • 3 quarts water or beef stock
  • 1 small can tomato sauce
  • Brown ground beef. Add 1/2 of the chopped green onions. Drain grease off meat into a big pot and reserve for the sauce. Set meat aside.

    Put flour in quart jar with 1 quart of water. Shake well. Pour into pot, making sure that there are not any lumps. Add chili powder, garlic, and salt. Wisk swiftly. Add other 2 quarts of water. Crush the beef bouillion cubes and add to mixture. Keep wisking. Simmer until thick and bubbly.

    Layer sauce, tortillas, sauce, ground beef, and cheese. Keep repeating until all tortillas and meat are gone. Top with lots of cheese and black olives. Bake in a 350 degree oven for 30 minutes.
