"Ginger Spiced Pork"

Recipe Submitted by Gianne from Wales, UK:

  • 1 1/2lb/675g pork - fat trimmed off and cubed
  • 1oz/25g flour (white - SR or plain)
  • 1 level teaspoon ginger (powder or the moist type in soyabean sauce)
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon Tabasco sauce
  • 1 tablespoon Worcester sauce
  • 2 tablespoons cider or wine vinegar (I use cider)
  • 2 level tablespoons brown sugar (as in Demerara - Dark brown soft)
  • 2 cloves of garlic or the equivalent in the minced moist type
  • 14oz/400g tin tomatoes
  • 4oz/100g button mushrooms - sliced
  • Very small onion (chopped finely) - if desired (optional)
  • Bay leaf.
  • Coat the meat in the seasoned flour (salt + flour put in a plastic bag and mixed together...then toss the meat in to coat it evenly and completely). Fry until brown. Put it into a large casserole dish and add all the other ingredients (no need to stagger). Mix well and cook for 2 hours at 325 degree Fahrenheit / Gas regulo 3.

    Myself, I prefer doing it in a Slo-Cooker..when I can put it all in the pot before I go to work in the morning....cook it for 20 mins at high...then until I come home (about 8-9 hours) at low. It is absolutely perfect.

It can be eaten with just rice or/and a crispy, buttered baked potato, and a full mixed salad (i.e. lettuce, tomatoes, cucumber, radish, spring onions, celery, yellow/orange mushrooms, beetroot, beansprouts, nuts, cress etc., all finely chopped up, seasoned and tossed in olive oil ), with boiled/roasted vegetables and mashed potatoes, or with stirfry vegetables - again with very little olive oil used...almost dry frying.
