Saute the onion in the olive oil. When the onion is softened, add the carrot, peas, and meat. Saute together for a few minutes until everything is hot. Add the leftover rice and soy sauce. Turn up the heat to medium and stir-fry for as long as it takes for the rice to heat thoroughly.
Godzilla tells us, "You can add whatever leftover meat you have, or any other vegetables. This is really filling when you use brown rice. Yum!"
