Salsa Sauce

Chili Pepper
  • 5 pounds of Tomatoes
  • 1 large Spanish Onion (OR 4 small garden onions)
  • 1 red Paprika
  • 2 green Paprika
  • 6 Jalapeno's (may substitute with any combination of canned pickled peppers such as banana peppers)
  • 2 tsp Paprika powder
  • 1 can Tomato paste 5.5 oz can
  • 3/4 cup Vinegar
  • 1/4 cup Brown Sugar
  • 1 tablespoon Salt, pickling (can use regular salt if you don't have pickling salt)
  • 2 green chili's
  • 1 tsp Cilantro (her) opt.
  • Blanch and peel tomatoes, then dice. Small dice other ingredients. Boil all the ingredients for one hour. (Be careful to stir regularly or the bottom may scorch.) Put directly into sealer. I use Cheez Whiz jars because they are self sealing but you may seal in regular sealers. When I doubled the above recipe it gave approximately 6 cheez whiz jars.

    BigE tells us, "I use this recipe every year using tomatoes from my own garden. For a milder salsa, omit the green chiles."
