"Mexican Corn Bread"

Recipe Submitted by Bev:

  • 1 1/2 yellow corn meal
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups buttermilk
  • 1 cup of corn
  • 3 tablespoons vegetable oil
  • 3 chopped jalapenos seeded and chopped fine


    1. Heat oven to 400. place a 9 to 10 inch oven proof skillet in the oven
    2. Mix cornmeal , flour, sugar, baking powder, baking soda, and salt until blended.
    3. Stir in buttermilk, then corn,oil and jalapenos until blended.
    4. Remove the hot skillet from the oven and spray with cooking spray.
    5. Pour batter into skillet.
    6. Bake for 30 minutes or until a toothpick stuck in the bread comes out clean.
