"Chicken Enchiladas"

  • 16 corn tortillas (stack and wrapped in foil)
  • 1 med.sized onion
  • 1 tablespoon vegetable oil
  • 1 teaspoon garlic powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 8oz. light cream cheese
  • 6 cups shredded cooked chicken
  • 3/4 cup salsa
  • 1 1/2 cups cheddar cheese
  • 2 cans enchilada sauce


    1. Preheat oven to 350
    2. Put the tortillas in the oven for about 8 min
    3. Heat oil in over medium heat add onion cook till soft stir in chili powder
    4. garlic powder, and cumin. turn heat down and add cream cheese breaking up cheese till melted then add the chicken and salsa cook for an additional 3 minutes
    5. Remove from heat stir in 1 cup of cheese
    6. Unwrap the tortillas spread 1/4 cup of enchilada sauce over the bottom of your baking dish.
    7. Spoon filling into tortillas roll up from the bottom and arrange in baking dish seam side down.
    8. Top with the rest of the enchilada sauce and cheese.
    9. Bake for 15 to 20 minutes til cheese begins to bubble.
