Place softened cream cheese in mixer bowl with sour cream, sugar and vanilla. Mix until smooth. Add eggs one at a time at low speed mixing well after each addition. Pour mixture into graham cracker crust and bake at 325 degrees for 40-45 minutes or until almost set. (Now, here's the secret). Turn oven off and leave cheesecake in oven with door propped open with wooden spoon for 30 minutes. Then remove from oven and chill 3 hours.
