"Corn Casserole"

Recipe Submitted by Carolyn from West Oneonta, NY:

  • one can creamed corn
  • one can regular corn
  • one onion chopped finely
  • two eggs, beaten
  • 8 ounces sour cream
  • one half stick margarine
  • one box Jiffy corn muffin mix
  • salt and pepper to taste
  • Grease casserole dish. Combine all ingredients in dish. Bake at 350 degrees for 30 to 45 minutes, until set in the middle and slightly browned on top.

    Carolyn tells us, "This is delicious and good served with a holiday meal! Also quick and easy to prepare for a pot luck dinner."
