Recipe Submitted by Christy:

  • 12 medium potatoes, peeled and quartered
  • 1 medium onion, peeled and chopped
  • 7 cups water
  • 10-12 ounces Velveeta cheese (I use light style) cubed
  • salt and pepper to taste
  • Place potatoes, onions, & water in large dutch oven or pot. Bring to a boil and cook until potatoes are soft. Place potatoes, onions, water and some cheese in a blender and process till smooth. Use small quantities at a time as this will make A LOT of soup. Continue till all is processed and eat up. You can also throw some broccoli or asparagus into the potato pot about 5 minutes before the potatoes are done and process it with the potatoes.

    Christy tells us, I serve this with home made french bread or crackers on my busy days. My family really likes it with the broccoli.
