1) combine the minced meat, breadcrumbs, egg, tomato paste, curry powder, pepper & salt, and form the mixture into 6 large flat patties.
2) Heat oil & panfry sliced onion for 3-4 mins
3) Add the capsicum & fry for 3-4 mins longer
4) Lift out of the pan.
5) Cook the patties in the remaining oil, turning once during cooking , for 12-15 mins depanding on thickness.
6) Toast the buns & lightly butter.
7) Arrange lettuce & pineapple slice on each base. Spoon on onions & capsicum mixture. Top with a pattie & the remaining capsicum & onion mix.
8) Serve immediately.
